Course Description: Are you interested in gaining a working knowledge of the medicinal qualities of different herbs and how to identify, grow and use them? This course will explore garden herbs, wild herbs, culinary herbs and Chinese herbs. We will discover what ailments herbs have been used for traditionally and how to prepare them, learn to make herbal teas and vinegars, and discuss how we can incorporate the use of herbs into our daily lives. We will get a start on planning and designing our own herb gardens and find out how best to plant herbs and the conditions necessary for optimal growth. Lastly, we will embark on a Saturday field trip to the woods to learn to identify local wild herbs and then will visit the instructor’s own herb garden for a hands-on illustration of many of the principles discussed in class.
Notes and Comments: Registration begins on January 2, 2008. This course also includes a field trip on Saturday, April 19 from 9:30 a.m.- 1:00 p.m. There will be no class on March 4 for U.Va. Spring Break.
