Course Description: This course will introduce you to key concepts and guiding principles in nutrition in order to help make informed and wise food choices for optimal health. It is designed to dispel myths and to clarify the latest research-based concepts about eating well, including food production and processing, diets, weight loss, food allergies, fueling for sport, and preventing disease. We will learn how to read labels and select food for maximum nutrient density, practice meal planning and nutrient balance, and gain practical tips and recipes to incorporate food, fitness and fun into everyday eating. The course will include a series of nutrition lectures, discussion, culinary demonstrations and a supermarket tour.
